Goat Cheese Potato Balls

This is really a leftover recipe.


  • left over mashed potatoes
  • sour cream
  • green onion
  • milk
  • kalamata olives
  • goat cheese
  • olive oil


  1. Warm oven to 350F
  2. Reconstitute the left over mashed potatoes with sour cream and milk
  3. Chop the green onion into small/medium pieces.
  4. Gently mix the green onion into the potatoes
  5. Spray a cookie sheet with non-stick spray
  6. Using an ice-cream scoop, make half-spheres of the potato, sour cream, and green onion mixture and place on cookie sheet
  7. Sprinkle with corsely ground pepper
  8. With your thumb, make a hole in the top center of each mound
  9. Place a kalamata olive and hunk of goat cheese in each hole
  10. Drizzle olive oil on each mound
  11. Place in oven for about 15 minutes, or until the goat cheese starts to melt
