This is really a leftover recipe.
Ingredients
- left over mashed potatoes
- sour cream
- green onion
- milk
- kalamata olives
- goat cheese
- olive oil
Preperation
- Warm oven to 350F
- Reconstitute the left over mashed potatoes with sour cream and milk
- Chop the green onion into small/medium pieces.
- Gently mix the green onion into the potatoes
- Spray a cookie sheet with non-stick spray
- Using an ice-cream scoop, make half-spheres of the potato, sour cream, and green onion mixture and place on cookie sheet
- Sprinkle with corsely ground pepper
- With your thumb, make a hole in the top center of each mound
- Place a kalamata olive and hunk of goat cheese in each hole
- Drizzle olive oil on each mound
- Place in oven for about 15 minutes, or until the goat cheese starts to melt
