  • One de-boned leg of lamb
  • 4 TBS of pesto
  • 3 small red onions
  • 1 clove garlic


  1. Preheat oven to 400F
  2. Remove as much hard/surface fat and connective tissue as you can from the leg of lamb
  3. Cube the leg into chunks that that your meat grinder can take. 1" is about the best for this
  4. Peel the onions and cut into chunks no larger than 1", put one onion aside
  5. Skin the garlic
  6. Grind the meat, onion and garlic in equal proportions into a large metal bowl
  7. Once all the mixture is ground, grind the last onion to get the rest of the meat through
  8. Add 4 large TBS of pesto the mix
  9. Blend the mixture until is pretty evenly distributed
  10. Spray two cupcake sheets with non-stick spray
  11. Using an ice-cream scoop, place the mixture onto the sheets
  12. Bake for 30 minutes or until the balls are brown on top


  • Serve with rice, Persian cucumbers, humus and slices of tomato.
